When recipes were first written down, there was no set system of measures. Words like "smidgen", "pinch" and "dollop" were used when a small yet indeterminate amount of an ingredient was required. We still use them this way now, as they leave room for taste and adjustment. Smidgen, from the Scottish word "smitch", means "an almost trace amount, a few grains or a tiny sliver" (1,473 words)
