As it happens, this is exactly the kind of thing I think everyone needs to pay more attention to. What the second lives of these old landscapes will look like is a really important question. But it doesn’t give you any facile narratives. It turns out espresso is effectively impossible to make without steam power, which I sort of thought but didn’t know for sure.
The first obvious forerunner of the modern espresso machine, was, not surprisingly, designed in Italy. And the story goes from there. Fun read.
