On iOS, you can tell apps not to track you across 3rd-party apps and sites:
Settings → Privacy → Tracking → Allow Apps to Request to Track

Android doesn’t have anything to prevent cross-app tracking but it does have a setting to not use device ‘ad ID’ for that:
Settings → Google → Ads
