“Hey babe, do you think you could reverse-engineer these?” 

Challenge accepted.

Lyle had just arrived home from a week at Bandon Dunes golf course in Oregon and was raving about the energy balls he bought from the golf course snack shack. He brought some home for me to try, packaged just like a sleeve of golf balls (how cute!). I resisted the urge to ask him how much they cost — I’m sure the sticker shock would have hit me hard…

I took a bite of one of the balls — nutty, sweet, firm — no problem! I got to work the next day and below is the recipe I ended up with. They are a go-to snack anytime we go hiking or need a quick bite and I’m pretty sure they are a favorite midnight munch for Lyle. 

I typically make them with budget-friendly peanut butter, but you can easily swap out any other nut butter, just make sure it isn’t too firm as you’ll need a nice spreadable consistency to mix with the other ingredients. 

Ingredients:

• ½ cup old fashioned oats

• ½ cup nut butter 

• ¼ cup dark chocolate chips (I prefer the mini)

• 2 Tablespoons chia seeds

• 2 Tablespoons honey

Directions:

1. Mix together all ingredients in a medium bowl until well combined.

2. Roll together approximately 2 Tablespoons of the mixture into a ball using your hands. You should get 7-8 golf-ball-sized energy bites. 

3. Refrigerate for at least an hour for them to firm up. 

4. Enjoy!
