Behind the Waterfall

Recipe time! This is a new one that I just recently "mastered" (which to me just means that I memorized the recipe and can cook it reliably without messing up).

I love this recipe because it's so flexible and delicious on almost anything. I especially like it in mac & cheese, lasagna, or on breakfast sammies mmm yes.

Béchamel sauce

Ingredients

  1. 1 T butter
  2. 1 T flour
  3. 1 cup milk
  4. 1/4 tsp nutmeg
  5. 1/4 tsp salt
  6. (technically optional but come on) ½ cup shredded cheese

Note: vegan or gluten-free alternatives generally work just fine. Mozzarella cheese is a standard but you almost can't go wrong.

Directions

  1. Melt butter in a saucepan over medium heat.
  2. Add flour, stirring until incorporated. Cook + stir about 1 minute.
  3. Slowly add milk about 1/4 cup at a time and mix/cook until incorporated, stirring constantly.
  4. Once all milk is added, cook + stir for about 8 minutes.
  5. Remove from heat. Add spices and cheese, stir until cheese is melted.
  6. Adjust to taste.

There are some key elements to consider:

  1. You can add less milk to make it thicker, more milk to make it thinner.
  2. You can add less or more cheese to your taste.
  3. Don't have nutmeg? Try a little lemon juice.
  4. A pinch of parmesan is very good in this.
  5. White pepper goes well in this.

Bechamel sauce is ... maybe like particles in a game -- you can sprinkle it on almost anything and it becomes better. Simple, reliable, crowd-pleasing. Delightful every time you see it; never really gets old.

Just two more recipes to go! I know what the last recipe will be, but not yet the penultimate one. That last one's gonna be a whole episode; it's gonna be good.
