For me, this time of year is so fickle: Spring feels juuust around the corner, but in reality (or at least where I live on the East Coast), the market is still full of root vegetables, and cultivating coziness is still key. This week, we’re leaning into that energy with two highly riffable, no-recipe soup strategies for turning odds and ends into something delicious from cookbook author Julia Turshen, plus plenty of recs and reads. Fried rice, the remix: The best dinners come together in minutes but taste like they took way longer. Exhibit A: Egg rice fried in nutty sesame scallion oil, served with spicy tinned fish, nori, and fluffy sushi rice.

How to Make Soup From (Almost) Anything: A Genius Guide from Julia Turshen

Cookbook author Julia Turshen is a master of creating recipes for the hungry and indecisive, a.k.a. me (and maybe also you). Her comfort-forward meals hinge on minimal ingredient lists, shared with unflappable ease. Here, she shares how to make truly transcendent soup with whatever is on hand.—Aliza  

Soup is not just one of my favorite things to eat, it’s one of my favorite things to cook. It lets me clear out the fridge and extend the little bits of this and that into a pot of food. The leftovers only get better when they sit in the fridge for a couple of days, although soup freezes and defrosts well too. To have this easygoing relationship with soup making, there are two pieces of equipment that I think deserve some appreciation:

First, a great soup pot is your best friend. I’m talking about something heavy like a Dutch oven that you can (a) make a nice quantity of soup in and (b) let simmer without worrying about things sticking since the material is nice and substantial (like enameled cast iron). You can also, of course, use this pot to make a million other things.

The second handy tool is an immersion blender, especially if you like puréed soups. They’re cheaper than regular blenders and you can just blend directly in the pot—no worrying about transferring hot soup from one place to another, nor washing a blender container. You can also purée just some of your soup to add a little thickness to a broth while preserving some texture. Below are two of my flexible soup strategies.
