Our favorite baking sheets are the same kind you’ll find in restaurant kitchens. They’re sturdy, inexpensive, and bake evenly. They excel at browning cookies, cooking the occasional sheet-pan dinner, and roasting veggies. (And if you’re doing that, here’s one foolproof method to roast every kind of vegetable.)
