This recipe for bread pudding came up during the episode! It was meant to be.

Matt's Bread Pudding

Bread pudding is simple, delicious, and you might have everything you need to make it in your home right now. Just like a video game!

Ingredients

  1. 6 slices bread (diced into about 1" cubes) -- any bread will do! Last time I used sourdough and it was fantastic. Even stale bread works!
  2. 2 T butter (melted) -- feel free to use butter substitute
  3. 4 eggs (beaten)
  4. 2 cups milk (lactose-free or vegan OK! use any milk)
  5. 3/4 cups granulated sugar
  6. 1 tsp vanilla extract
  7. 1 tsp ground cinnamon
  8. 1/2 tsp salt

Directions

Preheat oven to 350F. Mix all ingredients together then pour the mixture into a greased baking dish or cast iron skillet. Bake for 50 minutes or until golden brown. Let cool for a few minutes then slice and serve. Leftovers should be refrigerated.

Advanced techniques

  • Try toasting the diced bread cubes on a baking sheet for 5-10 minutes to firm them up. (This increases the textural contrast in the dish.)
  • Instead of 3/4 cup sugar: use 1/4 cup sugar, 1/4 cup brown sugar, and 1/4 cup honey. (This adds to the depth of flavor.)
  • Add 1/2 tsp ground nutmeg. (Enhances the natural flavor of the bread.)
  • Add a pinch of chives. Or two! (Adds a little spice.)
  • If you're feeling adventurous, dice a small apple and throw it into your mixture. (How can you go wrong?)
